  • 2 medium ripe avocados, peeled and pitted
  • 4 large fresh eggs
  • 2 tablespoons extra virgin olive oil

  • Freshly ground black pepper to taste
  • 1 teaspoon everything bagel seasoning (optional)
  • Pinch of chili flakes (optional)
  • Small handful of chopped fresh parsley or chives for garnish

Instructions

  1. Fill a medium saucepan with water and bring it to a gentle boil over medium-high heat. Once boiling, reduce to a simmer for poaching eggs.
  2. Using a slotted spoon, gently lower large eggs into simmering water. Cook for exactly 6 minutes for jammy yolks. Prepare an ice bath to immediately transfer the eggs after cooking to stop them from overcooking. Set aside.
  3. While eggs cook, heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Place everything bagel halves cut-side down in the pan. Toast until golden brown and crispy, about 3-4 minutes. Flip and toast the outside edges for another 2 minutes. Remove and set aside.
  4. In a bowl, scoop out the ripe avocado flesh. Add fresh lemon juice, a pinch of salt, and pepper. Mash with a fork until creamy but still a bit chunky. Stir in chili flakes if desired.
  5. Carefully peel eggs once cool. Slice in half lengthwise to reveal the jammy yolk.
  6. Spread a generous layer of avocado mash on each toasted bagel half. Place two egg halves on top. Sprinkle with flaky sea salt, cracked black pepper, and extra everything bagel seasoning if desired. Garnish with chopped fresh herbs.
