  • 2 ¼ tsp active dry yeast (7g or one packet)
  • 2 tbsp granulated sugar (25g)
  • 3 tbsp unsalted butter, melted (42g)
  • 1 ½ tsp salt (9g)
  • ¼ cup baking soda (60g)
  • 2 cups cooked shredded chicken (280g)
  • 8 oz cream cheese, softened (225g)
  • ½ cup buffalo wing sauce (120 ml)
  • ¼ cup ranch dressing (60 ml)
  • 1 cup shredded cheddar cheese (113g)
  • 2 tbsp chopped green onions (optional)

Instructions

  1. Activate the yeast by combining warm water (about 110°F / 43°C), sugar, and yeast in a large bowl. Stir gently and let sit until foamy on top (5-7 minutes).
  2. Add melted butter and salt to the yeast mixture. Gradually mix in flour, one cup at a time, until a shaggy dough forms. Knead with a stand mixer dough hook on medium speed for 5 minutes or by hand on a floured surface for 8-10 minutes until smooth and elastic.
  3. Lightly oil a large bowl and place the dough inside, turning once to coat. Cover with a damp towel or plastic wrap and let rise in a warm spot until doubled in size (45-60 minutes).
  4. While the dough rises, combine shredded chicken, softened cream cheese, buffalo wing sauce, ranch dressing, shredded cheddar, and chopped green onions in a bowl. Mix until well combined and creamy. Adjust seasoning as desired.
  5. Preheat oven to 425°F (220°C). In a large pot, bring about 8 cups (2 liters) of water to a boil, then carefully add the baking soda (¼ cup / 60g).
  6. Punch down the risen dough and divide into two equal portions. Roll each into a long rope about 1 inch thick. Cut into 1 ½-inch pieces. Flatten each piece gently, place about a teaspoon of buffalo chicken dip filling in the center, then pinch edges closed tightly.
  7. Using a slotted spoon, submerge each stuffed bite in the boiling baking soda water for 30 seconds to 1 minute until they puff slightly. Remove and place on a parchment-lined baking sheet.
  8. Brush each pretzel bite with melted butter and sprinkle with coarse salt. Bake for 12-15 minutes until deep golden brown and crisp.
  9. Let the bites cool for 5 minutes before serving. Serve warm.

Notes

If the first batch is too soft, extend the baking soda bath by 15 seconds. Seal edges tightly to prevent filling leakage. Keep hands lightly floured when shaping dough. For gluten-free option, use almond flour-based dough or gluten-free flour mix with xanthan gum. Air frying is an alternative cooking method.
