  • 1 large fresh lemon (zest and juice)
  • 45 cloves fresh garlic, minced
  • 2 tablespoons fresh herbs (mix of rosemary and thyme), chopped
  • 2 tablespoons extra-virgin olive oil
  • 1.5 teaspoons kosher salt (Diamond Crystal; reduce if using finer salt)
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place the oven rack in the middle position.
  2. Take the chicken thighs out of the refrigerator and let them sit at room temperature for 15-20 minutes. Pat each thigh dry thoroughly with paper towels, pressing firmly to remove all moisture.
  3. In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, lemon zest, olive oil, kosher salt, black pepper, and red pepper flakes (if using). Stir into a rough paste.
  4. Place the dried chicken thighs on a large plate or cutting board. Rub the herb mixture all over each thigh, including under the skin if possible by gently lifting the skin and smearing some mixture directly onto the meat.
  5. Place a wire rack inside a rimmed baking sheet. Arrange the seasoned chicken thighs on the rack, skin side up, leaving space between each one (do not crowd).
  6. Bake for 35-40 minutes. Do not flip the chicken. Do not open the oven door for the first 25 minutes. At the 25-minute mark, rotate the pan if your oven has hot spots.
  7. Check for doneness: the skin should be deep golden brown and crispy, and the internal temperature should reach 175-185°F when inserted into the thickest part of the thigh (avoiding the bone). Alternatively, pierce the thickest part with a knife—juices should run clear and meat should pull away from the bone easily.
  8. Remove from the oven and transfer the chicken thighs to a clean plate or cutting board. Let them rest for 5-10 minutes before serving.
  9. Optional: While the chicken rests, pour the pan juices into a small saucepan. Add a squeeze of fresh lemon juice and a splash of chicken broth or white wine. Bring to a simmer, scrape up browned bits, and let reduce for 1-2 minutes. Drizzle over the chicken before serving.
