These crispy bacon-wrapped stuffed jalapeño poppers are a quick and easy appetizer featuring smoky bacon, spicy jalapeños, and a creamy cheese filling. Perfect for parties, game days, or casual get-togethers.

  • 12 medium-sized fresh jalapeños, firm and bright green
  • 8 ounces (227 grams) cream cheese, softened to room temperature
  • 1 cup (100 grams) shredded cheddar cheese, sharp or mild
  • 12 slices thin-cut bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: 1 tablespoon chopped fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if you have one.
  2. Wearing gloves, slice each jalapeño in half lengthwise. Remove seeds and membranes using a small spoon or knife.
  3. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and black pepper. Stir until smooth and evenly blended. Fold in cilantro if using.
  4. Spoon the cheese mixture generously into each jalapeño half.
  5. Wrap one slice of bacon around each stuffed jalapeño half. Secure with a toothpick if needed.
  6. Place the wrapped poppers on the wire rack or directly on the foil-lined baking sheet, spacing them apart.
  7. Bake for 20-25 minutes, or until bacon is crispy and cheese is bubbly. If not using a rack, flip halfway through baking for even crispness.
  8. Let the poppers rest for 5 minutes before serving.

Notes

Wear gloves when handling jalapeños to avoid irritation. Use thin-cut bacon for best results. If bacon is thick, precook for 3-4 minutes before wrapping. Flip poppers halfway through baking if not using a wire rack. For milder poppers, remove all seeds and membranes. Reheat leftovers in a 350°F oven for 8-10 minutes to restore crispiness; avoid microwaving.
