Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together 2 ½ cups (315 g) all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Set aside.
  3. In a large bowl, beat 1 cup (226 g) softened unsalted butter with 1 cup (200 g) granulated sugar until light and fluffy, about 3-4 minutes with an electric mixer.
  4. Beat in 1 large room temperature egg and 1 teaspoon vanilla extract until combined.
  5. Gradually add the flour mixture to the butter mixture, stirring just until combined. Avoid overmixing.
