  • ½ cup packed sun-dried tomatoes (preferably oil-packed)
  • ¾ cup heavy cream
  • ½ cup chicken broth
  • A handful fresh basil, chopped
  • 2 tablespoons pine nuts
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: red pepper flakes, lemon zest

Instructions

  1. Slice the chicken breasts horizontally to create thinner cutlets about ½-inch thick for even cooking. Chop the sun-dried tomatoes finely, mince the garlic, and roughly chop the basil. Toast the pine nuts in the skillet over medium heat until golden and fragrant, about 2-3 minutes. Set aside.
  2. Heat 1 tablespoon of olive oil over medium heat. Season chicken with salt and pepper. Add to the hot skillet and cook for 4-5 minutes per side until golden and cooked through (internal temperature 165°F). Remove chicken and set aside on a warm plate.
  3. Add remaining tablespoon of olive oil to the skillet. Toss in garlic and chopped sun-dried tomatoes, stirring frequently to prevent burning, about 2-3 minutes.
  4. Pour in chicken broth and scrape up any browned bits from the pan. Let it reduce slightly, about 2 minutes. Stir in heavy cream and grated Parmesan cheese. Simmer gently until the sauce thickens enough to coat the back of a spoon, approximately 3 minutes.
  5. Return the cooked chicken to the skillet, nestling it into the sauce. Spoon the sauce over the top, then sprinkle with chopped fresh basil and toasted pine nuts. Let everything warm together for another 2-3 minutes so flavors meld.
  6. Serve hot over creamy mashed potatoes, buttered pasta, or fluffy rice to soak up the sauce.
