  • 1 large head of garlic
  • 1 medium yellow onion, quartered
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 sprigs fresh thyme
  • 2 tablespoons unsalted butter
  • ½ cup heavy cream
  • 2 cups low-sodium vegetable broth
  • 1 teaspoon sugar
  • ½ teaspoon red pepper flakes (optional)
  • Fresh basil leaves, torn (for garnish)
  • Extra drizzle of heavy cream or olive oil (for garnish)
  • Croutons or crusty bread (for garnish)
  • Freshly grated Parmesan cheese (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the vegetables: Halve Roma tomatoes lengthwise and arrange cut-side up on a baking sheet. Quarter the onion and scatter around. Cut the top off the head of garlic, wrap in foil with a drizzle of olive oil, and nestle on the baking sheet.
  3. Season and roast: Drizzle with olive oil, sprinkle with salt, pepper, and thyme. Toss gently. Roast for 45-55 minutes until tomatoes are shriveled and browning, garlic is soft.
  4. Cool slightly for about 5 minutes.
  5. Squeeze roasted garlic cloves out of skins.
  6. In a large pot or Dutch oven, melt butter over medium heat. Add roasted onion and cook for 2-3 minutes.
  7. Add roasted tomatoes (with juices), all roasted garlic, vegetable broth, sugar, and red pepper flakes (if using). Bring to a gentle simmer.
  8. Remove from heat. Blend with an immersion blender until smooth. (If using a regular blender, work in batches, filling halfway.)
  9. Stir in heavy cream. Taste and adjust seasoning. Warm through over low heat for 2-3 minutes without boiling.
  10. Serve immediately with desired garnishes.

Notes

Don’t rush the roasting; 400°F is the sweet spot. Check garlic at 35 minutes to avoid burning. Blend hot soup carefully. Taste and adjust seasoning as tomatoes vary. Soup gets better after sitting overnight in the fridge. For freezing, freeze before adding cream for best texture.
