  • 1 large ripe banana (the riper the better)
  • 2 tablespoons (32g) creamy peanut butter
  • ¾ cup (180ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • ½ teaspoon (2ml) vanilla extract (optional)

Instructions

  1. Mash the banana: In your jar or a small bowl, add the peeled banana. Use a fork to mash it until mostly smooth with just a few small lumps.
  2. Add the peanut butter and milk: Spoon in the peanut butter and pour in the milk. Whisk or stir with your fork until the peanut butter is fully incorporated into the milk and banana mixture (about 30 seconds of vigorous stirring).
  3. Add the sweetener, chia seeds, salt, and vanilla: If using, add maple syrup or honey, chia seeds, pinch of salt, and vanilla extract. Stir to combine.
  4. Add the rolled oats: Pour in the rolled oats and stir until every oat is coated in the liquid mixture. The liquid should just barely cover the oats; if too dry, add another tablespoon of milk.
  5. Cover and refrigerate: Put the lid on your jar and place in the refrigerator. Let sit for at least 6 hours, but overnight (8-12 hours) is ideal.
  6. Enjoy in the morning: Take the jar out of the fridge, give it a good stir. If too thick, stir in a splash of milk. Add toppings (sliced banana, extra peanut butter, chopped peanuts, etc.) and eat cold, or microwave for 30-45 seconds if preferred.

Mash the banana thoroughly for the creamiest texture. Taste the liquid mixture before adding oats to adjust sweetness. Use rolled oats, not quick or steel-cut oats.
