  • ½ cup pumpkin puree (100% pure, not pie filling)
  • ¾ cup milk of choice (whole milk, oat milk, or almond milk)
  • ¼ cup Greek yogurt (plain or vanilla)
  • 2 tablespoons maple syrup (or honey)
  • 1 tablespoon chia seeds
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • For topping (optional): 2 tablespoons chopped pecans or walnuts, 1 tablespoon pumpkin seeds, extra maple syrup or cinnamon

Instructions

  1. Combine the wet ingredients. In a jar or mixing bowl, add ¾ cup milk, ½ cup pumpkin puree, ¼ cup Greek yogurt, 2 tablespoons maple syrup, and ½ teaspoon vanilla extract. Whisk until smooth.
  2. Add the dry ingredients. Pour in 1 cup rolled oats, 1 tablespoon chia seeds, 1 teaspoon pumpkin pie spice, and a pinch of salt. Stir well for about 30 seconds until fully incorporated.
  3. Check the consistency. The mixture should look a little thinner than you think it should be. If it looks like soup, you’re good. If it looks like porridge already, add another tablespoon or two of milk.
  4. Seal and refrigerate. Put the lid on your jar or container and place it in the fridge. Let it sit for at least 6 hours, but overnight is best.
  5. Morning assembly. In the morning, take the jar out of the fridge. Give it a good stir. The oats should be thick, creamy, and slightly pudding-like. If too thick, stir in a splash of milk.
  6. Add toppings. Sprinkle on chopped pecans, pumpkin seeds, or any other toppings you like. A final drizzle of maple syrup or a dusting of cinnamon is optional.
  7. Serve cold or warm. Eat straight from the fridge, or microwave for 45-60 seconds if you prefer a warm breakfast.

Notes

For best texture, use rolled oats (not quick or steel-cut). Chia seeds are essential for creaminess. The flavors improve on the second day. Store in the refrigerator for up to 5 days. Toppings should be added just before serving to maintain crunch.
