  • 1/2 cup (45g) old-fashioned rolled oats
  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk recommended)
  • 1/4 cup (60g) plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder (optional, recommended)
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, chopped peanuts, dark chocolate chips, extra peanut butter drizzle, cinnamon

Instructions

  1. Grab a clean, dry 16-ounce mason jar or airtight container.
  2. Add dry ingredients first: 1/2 cup rolled oats, 1 scoop vanilla protein powder, 1 tablespoon chia seeds, and a pinch of salt. Stir to combine.
  3. Add wet ingredients: 1/2 cup milk, 1/4 cup Greek yogurt, 2 tablespoons creamy peanut butter, 1 tablespoon maple syrup or honey, and 1/2 teaspoon vanilla extract.
  4. Stir vigorously for at least 30 seconds until everything is fully incorporated—no dry pockets of protein powder or unmixed chia seeds. The peanut butter should start breaking down and swirling into the milk.
  5. Taste and adjust sweetness or peanut butter flavor as desired.
  6. Seal the jar tightly and give it a gentle shake to distribute ingredients.
  7. Refrigerate for at least 6 hours, preferably 8-12 hours overnight.
  8. In the morning, stir the oats. If too thick, add a splash of milk to reach desired consistency. Add toppings and enjoy cold, or microwave for 45-60 seconds if you prefer warm oats.

Notes

For best texture, use old-fashioned rolled oats (not quick or steel-cut). Stir twice—once before bed and once in the morning—for even consistency. If skipping protein powder, add an extra tablespoon of peanut butter and an extra tablespoon of Greek yogurt. Oats keep in the fridge for up to 5 days. Can be frozen for up to 3 months (thaw overnight in fridge).
