  • 8 ounces cremini or white mushrooms, sliced

  • 3 cups low sodium beef broth
  • 1 cup full-fat sour cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Slice the beef thinly against the grain into bite-sized strips (about 1/4 inch thick). Clean and slice mushrooms evenly. Chop the onion finely and mince garlic.
  2. Heat 1 tablespoon olive oil and 1 tablespoon butter over medium-high heat in a large deep skillet or Dutch oven. Add the beef in a single layer and sear until browned but not cooked through, about 2 minutes per side. Remove beef and set aside.
  3. In the same pot, add remaining butter. Cook onions until translucent, about 4 minutes. Add mushrooms and cook until they release moisture and start to brown, about 5-6 minutes, stirring frequently.
  4. Add minced garlic and cook for 30 seconds until fragrant. Sprinkle flour evenly over the mixture and stir continuously for 1-2 minutes to cook out the raw flour taste.
  5. Slowly pour in beef broth, scraping the bottom of the pan to lift browned bits. Stir and bring to a gentle boil.
  6. Add egg noodles and browned beef back to the pot. Reduce heat to a simmer, cover, and cook for about 10 minutes or until noodles are tender and most broth is absorbed. Stir occasionally.
  7. Remove pot from heat. Stir in sour cream and Dijon mustard until sauce is smooth and creamy. Adjust seasoning with salt and pepper.
  8. Garnish with chopped fresh parsley and serve immediately.

Notes

Do not overcrowd the beef when searing to ensure proper browning. Use fresh egg noodles if possible for best texture. Stir sour cream in off the heat to prevent curdling. Adjust broth amount if sauce is too thick or thin. For dairy-free, substitute sour cream with coconut yogurt and use dairy-free butter or oil. For gluten-free, use gluten-free flour and noodles or spiralized zucchini.
