  • 1 cup (90g) rolled oats (old-fashioned)
  • ½ cup (120g) pumpkin puree (canned or freshly made)
  • ½ cup (120g) plain Greek yogurt (preferably full-fat)
  • 1 cup (240ml) milk (dairy or plant-based, recommended unsweetened almond milk)
  • 2 tablespoons (30ml) pure maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (2g) pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • ½ teaspoon (1g) cinnamon
  • 1 tablespoon (12g) chia seeds (optional)
  • For the Candied Pecans:
  • ½ cup (60g) pecans, roughly chopped
  • 1 tablespoon (15g) brown sugar
  • 1 teaspoon (5ml) maple syrup
  • Pinch of sea salt

Instructions

  1. In a bowl or jar, combine 1 cup rolled oats, ½ cup pumpkin puree, ½ cup Greek yogurt, and 1 cup milk. Stir thoroughly until uniform (about 5 minutes).
  2. Stir in 2 tablespoons maple syrup, 1 teaspoon vanilla extract, 1 teaspoon pumpkin pie spice, and ½ teaspoon cinnamon. Add 1 tablespoon chia seeds if desired.
  3. Cover and refrigerate for at least 6 hours or overnight to allow oats to soften without becoming mushy.
  4. To prepare candied pecans, heat a small skillet over medium heat. Add ½ cup pecans, 1 tablespoon brown sugar, 1 teaspoon maple syrup, and a pinch of sea salt. Stir continuously for 3–5 minutes until sugar melts and coats pecans evenly. Remove from heat and cool on parchment paper.
  5. In the morning, stir the oats well. Add a splash of milk if too thick. Portion into bowls and top generously with candied pecans.

Notes

Use canned pumpkin puree (not pumpkin pie filling) for best texture and flavor. Stir candied pecans constantly to avoid burning. Prepare oats the night before for best consistency. Store leftovers in airtight container up to 3 days; keep candied pecans separate until serving to maintain crunch. Can substitute Greek yogurt with coconut yogurt for dairy-free version. Rolled oats preferred over instant or steel-cut oats.
