  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup heavy cream or whole milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon Worcestershire sauce
  • Salt and black pepper to taste
  • 4 slices bacon, cooked and crumbled (optional)
  • 2 tablespoons ranch dressing (for drizzle)
  • 1 tablespoon sour cream (for drizzle)
  • 1 teaspoon fresh lemon juice (for drizzle)
  • 1 tablespoon milk (for drizzle)
  • Tortilla chips, celery sticks, carrot sticks, or crusty bread for serving

Instructions

  1. Prep your chicken: If using rotisserie chicken, remove skin and bones, then shred with two forks. If poaching, simmer chicken breasts in salted water for 12-15 minutes until cooked through, then shred.
  2. Cook the bacon: In a small skillet over medium heat, cook bacon until crispy, about 6-8 minutes. Drain on paper towels, then crumble.
  3. Soften the cream cheese: Let cream cheese sit at room temperature for at least 30 minutes, or microwave in 10-second intervals until soft.
  4. Combine the dip base: In a medium bowl, mix softened cream cheese, 1/2 cup ranch dressing (reserve 2 tablespoons), buffalo hot sauce, heavy cream, garlic powder, smoked paprika, and Worcestershire sauce until smooth.
  5. Fold in chicken and cheese: Add shredded chicken, 3/4 cup sharp cheddar, and 1/4 cup Monterey Jack cheese. Fold gently until evenly coated. Season with salt and pepper to taste.
  6. Transfer to slow cooker: Lightly grease a 3-quart or larger slow cooker insert. Spoon in the dip mixture and spread evenly.
  7. Top with remaining cheese: Sprinkle remaining 1/4 cup sharp cheddar and 1/4 cup Monterey Jack cheese over the top.
  8. Cook: Cover and cook on LOW for 2-3 hours or on HIGH for 1-1.5 hours, until hot and bubbly. Stir once halfway if desired.
  9. Make the ranch drizzle: In a small bowl, whisk together reserved 2 tablespoons ranch dressing, sour cream, lemon juice, and milk until smooth. Adjust consistency with more milk or sour cream as needed. Refrigerate until serving.
  10. Finish and serve: Sprinkle crumbled bacon over the hot dip. Drizzle ranch mixture in a zigzag pattern. Serve immediately from the slow cooker on ‘Warm’ setting with chips, celery, carrots, or bread.

Notes

For best results, use full-fat cream cheese and freshly shredded cheese. The ranch drizzle is essential for balancing the heat. If dip seems thin after cooking, it will thicken as it cools. Reheat leftovers in the slow cooker or microwave with a splash of milk. Not recommended for freezing.
