  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces full-fat cream cheese, softened
  • 6 slices bacon, cooked crisp and crumbled
  • 1 cup shredded cheddar cheese (about 100g)
  • 1 packet ranch seasoning mix (about 1 ounce/28g) or homemade blend
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh chives or green onions (optional garnish)

Instructions

  1. Cook the bacon in a skillet over medium heat for about 8 minutes until crisp. Drain on paper towels and crumble once cooled. Set aside.
  2. Place the chicken breasts in the bottom of the slow cooker and pat dry with a paper towel.
  3. In a bowl, combine softened cream cheese, ranch seasoning, garlic powder, onion powder, salt, and pepper. Stir until smooth and creamy. Microwave for 15 seconds if cream cheese is too firm.
  4. Spread the cream cheese mixture evenly over the chicken breasts in the slow cooker.
  5. Sprinkle half of the crumbled bacon and shredded cheddar cheese over the cream cheese layer.
  6. Cover and cook on low for 6 hours or on high for 3-4 hours until chicken is tender and reaches an internal temperature of 165°F (74°C).
  7. Remove chicken breasts and shred using two forks or a stand mixer with paddle attachment. Return shredded chicken to the slow cooker and stir to coat with sauce.
  8. Sprinkle the remaining cheese and bacon on top. Cover and let sit for 5-10 minutes to melt the cheese.
  9. Garnish with chopped fresh chives or green onions before serving.

Notes

Do not skip softening the cream cheese to avoid lumps. Cook bacon crisp but not burnt. Keep the slow cooker lid closed during cooking to maintain temperature. If sauce is too thick, stir in a splash of chicken broth. For extra flavor, add smoked paprika or a splash of chicken broth. Timing is flexible; switch to warm if cooking longer than 6 hours to avoid drying out. Adding cheese at the end keeps it melty and gooey.
