This isn’t your average holiday drink. It is rich without being heavy, sweet without being cloying, and the fresh nutmeg brings a warmth that the pre-ground stuff just can’t touch. This recipe turns a drink I used to avoid into something I genuinely look forward to all year.

  • 6 large egg yolks (room temperature)
  • 3/4 cup (150g) granulated sugar
  • 2 cups (480ml) whole milk
  • 1 cup (240ml) heavy cream
  • 1/2 teaspoon fine sea salt
  • 1 whole vanilla bean, split and scraped (or 2 teaspoons pure vanilla extract)
  • 1 whole nutmeg (grate about 1 1/2 teaspoons fresh)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup (120ml) bourbon, dark rum, or brandy (optional, to taste)
  • 1 cup (240ml) cold heavy cream, for whipping (optional)
  • Extra fresh nutmeg for grating on top

Instructions

  1. Prepare the Vanilla and Spices: In a medium saucepan, combine the whole milk, 1 cup of heavy cream, and the salt. If using a vanilla bean, split it lengthwise, scrape the seeds into the pot, and add the pod. Add the ground cinnamon and cloves. Place over medium heat and bring to a gentle simmer (small bubbles around the edges, do not boil). This takes about 5-7 minutes.
  2. Whisk the Egg Yolks and Sugar: While the milk heats, place the 6 egg yolks and granulated sugar in a large mixing bowl. Whisk vigorously until pale, thick, and falls in a thick ribbon (ribbon stage), about 2-3 minutes.
  3. Temper the Eggs: While whisking the egg mixture constantly, slowly pour a thin, steady stream of the hot milk mixture into the bowl. Start with about 1/2 cup, whisking constantly. Then slowly pour in another cup, still whisking.
  4. Cook the Custard: Pour the tempered egg mixture back into the saucepan. Return to medium-low heat. Stir constantly with a wooden spoon or heatproof silicone spatula, scraping the bottom and corners. Cook until the custard thickens enough to coat the back of a spoon (about 5-8 minutes). Do not let it boil.
  5. Strain and Chill: Remove from heat immediately. Pour the custard through a fine-mesh strainer into a clean pitcher or bowl to catch any solids or the vanilla bean pod. If using vanilla extract, stir it in now. Let cool at room temperature for about 20 minutes.
  6. Add the Spirit (Optional): Once slightly cooled, stir in bourbon, rum, or brandy. Start with 1/4 cup, taste, and add more if desired.
  7. Chill Completely: Cover and refrigerate for at least 4 hours, preferably overnight, for flavors to meld.
  8. Whip the Cream (Optional): Just before serving, whip the cold cup of heavy cream in a chilled bowl to soft peaks using a hand mixer or whisk.
  9. Serve and Garnish: Pour chilled eggnog into glasses. Top with whipped cream if using. Grate fresh nutmeg generously on top of each glass. Serve immediately.

Notes

The biggest mistake is rushing the tempering process. Go slow with a thin, steady stream while whisking constantly. Do not boil the custard after adding eggs. Fresh nutmeg is a game-changer—do not substitute with pre-ground. For best flavor, make it a day ahead. The alcohol helps preserve the eggnog, allowing it to last longer in the fridge.
