  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons mayonnaise

  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh chives, chopped

  • 810 large butter or romaine lettuce leaves

Instructions

  1. Prepare the chicken: If using a rotisserie chicken, remove skin and bones. Shred meat into bite-sized pieces (about 3 cups). Let cold chicken sit at room temperature for 10 minutes before mixing.
  2. Make the creamy dressing: In a large mixing bowl, combine Greek yogurt, mayonnaise, Dijon mustard, and fresh lemon juice. Whisk until smooth and fully combined. Taste and adjust lemon juice if needed.
  3. Add the crunch: Stir in finely diced celery and red onion until well coated in the dressing.
  4. Add the herbs: Fold in fresh dill and chives.
  5. Combine with chicken: Add shredded chicken to the bowl. Gently fold everything together with a spatula or large spoon, being careful not to overmix.
  6. Season generously: Add salt and black pepper to taste (start with 1/2 teaspoon salt and 1/4 teaspoon pepper). Stir, taste, and adjust.
  7. Chill (optional but recommended): Cover bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  8. Prepare the lettuce wraps: Wash and thoroughly dry lettuce leaves. For romaine, cut off the bottom to separate individual leaves.
  9. Assemble the wraps: Place a lettuce leaf on a plate. Spoon about 1/3 to 1/2 cup of chicken salad into the center.
  10. Wrap and serve: Fold sides of lettuce leaf over filling like a taco. Serve immediately while lettuce is crisp and cold.

Notes

Don’t overdress the chicken; add dressing gradually. Season in layers for best flavor. Let the salad rest in the fridge for 30 minutes to meld flavors. Keep lettuce separate until serving to avoid sogginess. Add nuts or seeds just before serving for crunch.
