This creamy, pudding-like overnight oats recipe is packed with fiber and protein, making it a filling and delicious breakfast that feels like dessert. It’s quick to prepare, customizable, and perfect for busy mornings.

Ingredients

Scale
  • 1/2 cup (40g) rolled oats
  • 1 tablespoon (15g) chia seeds
  • 2 tablespoons (10g) unsweetened cocoa powder
  • 1/2 cup (120ml) milk of choice (e.g., almond, oat, whole)
  • 1/4 cup (60g) plain Greek yogurt (optional)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mason jar or medium bowl, combine rolled oats, chia seeds, cocoa powder, and salt. Whisk together until evenly distributed.
  2. Add milk, Greek yogurt (if using), maple syrup or honey, and vanilla extract.
  3. Whisk vigorously for at least 30 seconds until cocoa powder is fully dissolved and no lumps remain. The mixture should look like thin chocolate pudding.
  4. Seal the jar or cover the bowl tightly and refrigerate for at least 4 hours, preferably overnight.
  5. In the morning, stir the oats. If too thick, add a splash of milk to loosen.
  6. Add desired toppings (e.g., fresh berries, banana slices, cacao nibs, nut butter) and enjoy cold or warm (microwave 30-45 seconds).

Notes

For best texture, use rolled oats (not instant or steel-cut). Whisk thoroughly to avoid cocoa lumps. The oats keep in the fridge for up to 5 days and can be frozen for up to 3 months. Toppings should be added just before serving.
