  • 1 medium kabocha squash (about 22.5 pounds), cut into 2-inch chunks (skin on)
  • 1 tablespoon coconut oil or olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 4 cups vegetable broth or chicken broth (low-sodium preferred)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • Optional toppings: toasted pumpkin seeds, drizzle of coconut cream, fresh cilantro, red pepper flakes

Instructions

  1. Prepare the squash: Cut the kabocha squash in half, scoop out seeds and stringy pulp, then cut each half into 2-inch chunks. The skin stays on.
  2. Sauté the aromatics: Heat the coconut oil in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes until translucent. Add the minced garlic and grated ginger, cook for 1-2 minutes until fragrant.
  3. Add the squash and broth: Add the kabocha chunks to the pot. Pour in the vegetable broth (it should just about cover the squash). Bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes until the squash is fork-tender.
  4. Check for doneness: Pierce a piece of squash with a fork; it should slide in easily. If not, cook for another 5 minutes.
  5. Add the coconut milk: Pour in the full can of coconut milk, stir, and heat through for 2-3 minutes over gentle simmer. Add salt and black pepper.
  6. Blend until smooth: Remove from heat. Use an immersion blender to blend until completely smooth. If using a regular blender, let cool for 10 minutes, then blend in batches (fill no more than halfway, hold lid with a towel, start on low).
  7. Taste and adjust: Adjust seasoning with more salt, pepper, or a squeeze of lime juice if desired.
  8. Serve immediately: Ladle into bowls and add desired toppings.

Notes

Don’t skip the ginger—it’s the star. Add coconut milk at the end to preserve its bright flavor. Season in layers for deeper flavor. For a thicker soup, simmer uncovered after blending; for thinner, add more broth. The soup tastes even better the next day.
