  • 1 tablespoon extra virgin olive oil
  • ¼ small red onion, finely diced (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh chives or green onions, chopped (optional, for garnish)

Instructions

  1. Rinse and dry the cucumbers thoroughly to avoid watery salad. Using a mandoline or sharp knife, slice them thinly—about 1/8 inch (3 mm) thick.
  2. If excess moisture is noticed, sprinkle a pinch of salt on the slices, toss gently, and let them sit in a colander for 10 minutes, then pat dry with paper towels.
  3. In a separate bowl, combine Greek yogurt, lemon juice, olive oil, and minced garlic. Whisk together until smooth.
  4. Add salt and freshly ground black pepper to taste. The dressing should be creamy but pourable.
  5. Fold in fresh dill and, if using, finely diced red onion. Stir gently to distribute evenly through the dressing.
  6. Combine the sliced cucumbers with the dressing in a mixing bowl. Toss gently but thoroughly so every slice is coated.
  7. Taste and adjust seasoning with salt or lemon juice if needed.
  8. Cover and refrigerate the salad for about 15-30 minutes before serving to let flavors meld (optional).
  9. Just before serving, sprinkle chopped fresh chives or green onions on top for extra freshness.

Salt cucumbers lightly before dressing to draw out excess water and keep the salad crisp. Use full-fat Greek yogurt for best creaminess. Fresh dill is essential for bright flavor.
