  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons fresh dill, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 small garlic clove, minced
  • 1 teaspoon fine sea salt (plus more for sweating)
  • ½ teaspoon freshly ground black pepper
  • ½ small red onion, thinly sliced (optional)

Instructions

  1. Wash cucumbers thoroughly. If using English cucumbers, leave skin on. Slice into thin rounds, about ⅛-inch thick.
  2. Place sliced cucumbers in a colander set over a bowl or in the sink. Sprinkle with 1 teaspoon of salt and toss gently. Let sit for 10 minutes to draw out excess moisture.
  3. After 10 minutes, gently press cucumbers with paper towels or a clean kitchen towel to remove released moisture. Set aside in a large mixing bowl.
  4. In a small bowl or mason jar, combine Greek yogurt, apple cider vinegar, olive oil, minced garlic, and black pepper. Whisk until smooth and creamy.
  5. Fold in chopped fresh dill and thinly sliced red onion (if using). Stir gently to combine.
  6. Pour dressing over dried cucumber slices. Toss gently until every slice is coated. Cover and refrigerate for at least 15-20 minutes before serving.
  7. Give the salad a quick stir, taste, and adjust seasoning if needed. Garnish with a sprig of fresh dill before serving.

Notes

The salting step is crucial to prevent a watery salad. For best texture, serve within 24 hours. The flavors improve after 30 minutes in the fridge. For a dairy-free version, use full-fat coconut yogurt. For a lower-fat version, use 2% Greek yogurt and reduce olive oil to ½ tablespoon.
