  • 23 Hatch green chiles, roasted and diced, or one 4-ounce jar of roasted Hatch peppers
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 ounces cream cheese, softened
  • 1 cup small-curd cottage cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: chopped fresh cilantro, shredded cheese, sour cream, avocado slices

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until translucent, about 5-7 minutes. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. If using fresh Hatch peppers, roast over a gas flame or under the broiler until charred on all sides. Place in a sealed plastic bag to steam for 10 minutes, then peel, seed, and dice. If using jarred peppers, drain and chop.
  3. Place chicken breasts in the bottom of the crockpot. Add sautéed onion and garlic, diced Hatch peppers, drained white beans, chicken broth, cumin, chili powder, oregano, salt, and pepper. Stir gently to combine.
  4. Cover and cook on low for about 6 hours, or until chicken is tender and easy to shred. Alternatively, cook on high for 3-4 hours.
  5. Shred the chicken directly in the crockpot using two forks or tongs. Stir to distribute evenly.
  6. In a mixing bowl, blend softened cream cheese and cottage cheese until smooth. Stir this mixture into the crockpot and cook an additional 15-20 minutes on low until creamy and heated through.
  7. Adjust seasoning with salt, pepper, or additional chili powder if desired.
  8. Serve in bowls and garnish with optional toppings like fresh cilantro, shredded cheese, sour cream, or avocado slices.

Notes

Sautéing onions and garlic before adding to the crockpot deepens flavor. Roasting Hatch peppers adds smoky heat. Use small-curd cottage cheese for better creaminess. If chili is too thick after adding cheeses, stir in a splash of chicken broth. Cooking on low preserves flavors better than high. Adjust seasoning after adding dairy to balance flavors.
