Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts (about 3 medium breasts)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) great northern beans, drained and rinsed
  • 1 can (15 oz) corn, drained (or 1.5 cups frozen corn)
  • 2 cans (4 oz each) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz cream cheese, softened and cubed
  • 1/2 cup heavy cream
  • Juice of 1 lime (about 2 tbsp)
  • Fresh cilantro, chopped (for garnish)
  • Shredded Monterey Jack cheese (for garnish)
  • Sour cream or Greek yogurt (for garnish)
  • Diced avocado (for garnish)
  • Tortilla chips or strips (for garnish)
  • Sliced jalapeños (for garnish, optional)

Instructions

  1. Prep your ingredients: Dice the onion and mince the garlic. Drain and rinse the great northern beans. Drain the corn and green chiles. Cube the cream cheese and let it sit at room temperature.
  2. Layer ingredients in the crockpot: Place the chicken breasts in the bottom of the slow cooker. Add the diced onion, minced garlic, drained beans, corn, and green chiles on top. Do not stir.
  3. Add the seasonings and broth: Sprinkle the cumin, oregano, chili powder, salt, and pepper over the top. Pour the chicken broth around the sides. Gently stir to combine.
  4. Cook on low (6-7 hours) or high (3-4 hours): Cover and cook until the chicken is fork-tender and easily shreds.
  5. Shred the chicken: Remove the chicken breasts from the crockpot and shred with two forks or a hand mixer on low speed. Return the shredded chicken to the crockpot.
  6. Make it creamy: Add the cubed cream cheese and heavy cream to the crockpot. Stir gently until the cream cheese is fully melted and incorporated.
  7. Finish with lime juice: Squeeze the juice of one lime into the chili and stir. Taste and adjust salt, pepper, or lime juice as needed.
  8. Serve and garnish: Ladle the chili into bowls and top with your favorite garnishes. Serve immediately.

Notes

For best results, use full-fat cream cheese and add it at the end to prevent curdling. The chili can be made a day ahead and reheated; flavors deepen overnight. For thicker chili, mash half a cup of beans before adding.
