Cozy Slow Cooker White Bean Turkey Chili

A cozy, set-it-and-forget-it turkey chili with creamy white beans and a smoky, savory broth. Perfect for busy weeknights or meal prep, this recipe delivers deep flavor with minimal effort.

  • 1 lb (450g) ground turkey (93% lean)
  • 2 cans (15 oz each / 425g each) white beans (cannellini or great northern), drained and rinsed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz / 411g) fire-roasted diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 2 cups (480ml) low-sodium chicken broth
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 chipotle pepper in adobo, minced, plus 1 teaspoon adobo sauce
  • Salt and black pepper to taste (start with 1 tsp salt and 1/2 tsp pepper)
  • 2 tablespoons olive oil
  • For serving (optional): shredded cheddar cheese, sour cream or Greek yogurt, sliced jalapeños, fresh cilantro, diced avocado, lime wedges, tortilla chips

Instructions

  1. Brown the turkey: Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (6-8 minutes). Season with a pinch of salt and pepper.
  2. Sauté the aromatics: Push turkey to one side of the skillet. Add diced onion and cook 3-4 minutes until softened. Add minced garlic and cook 30 seconds until fragrant. Stir everything together.
  3. Bloom the spices: Sprinkle smoked paprika, cumin, and dried oregano over the turkey and onions. Stir and cook for 1 minute.
  4. Add the tomato paste: Stir in tomato paste and cook for 2 minutes, letting it caramelize slightly.
  5. Transfer to slow cooker: Pour turkey mixture into a 6-quart slow cooker. Add fire-roasted tomatoes (undrained), drained white beans, minced chipotle pepper with adobo sauce, and chicken broth. Stir to combine.
  6. Slow cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  7. Adjust seasoning: About 30 minutes before serving, taste and add more salt and pepper if needed. For more heat, add another minced chipotle pepper or a pinch of cayenne.
  8. Serve: Ladle into bowls and top with desired garnishes.

Notes

Don’t skip browning the turkey or blooming the spices—they add essential flavor. For a thicker chili, mash some beans against the side of the slow cooker or cook uncovered for the last 30 minutes. Chili tastes even better the next day.
