Cozy Slow Cooker Turkey Chili with White Beans

A hearty, flavorful turkey chili made in the slow cooker with white beans, fire-roasted tomatoes, and poblano peppers. It’s creamy without cream, lean yet satisfying, and perfect for busy weeknights.

  • 1.5 lbs (680g) ground turkey (93% lean)
  • 1 large yellow onion, diced
  • 1 large poblano pepper, seeded and diced
  • 4 cloves garlic, minced
  • 2 cans (14.5 oz / 411g each) fire-roasted diced tomatoes, undrained
  • 2 cans (15 oz / 425g each) white beans (cannellini or great northern), drained and rinsed
  • 1 cup (240ml) low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • For garnish: fresh cilantro, sour cream or Greek yogurt, shredded cheddar cheese, diced avocado, lime wedges

Instructions

  1. Heat a large skillet over medium-high heat with a drizzle of olive oil. Add ground turkey and cook, breaking it up with a wooden spoon, until browned (6-8 minutes). Season with a pinch of salt and pepper. Transfer turkey to the slow cooker using a slotted spoon, leaving drippings in the pan.
  2. Reduce heat to medium. Add diced onion and poblano pepper to the same skillet. Cook for 4-5 minutes until onion is translucent and pepper softens. Add minced garlic and cook for 30 seconds until fragrant. Scrape into the slow cooker with the turkey.
  3. Pour fire-roasted diced tomatoes (undrained) into the slow cooker. Add drained and rinsed white beans and chicken broth. Stir gently to combine.
  4. Sprinkle chili powder, cumin, smoked paprika, dried oregano, salt, black pepper, and cayenne (if using) over the top. Stir thoroughly to distribute spices evenly.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours. About 30 minutes before serving, taste and adjust salt and spices as needed.
  6. Ladle chili into bowls. Garnish with cilantro, sour cream, shredded cheese, diced avocado, and a squeeze of lime. Serve with crusty bread or tortilla chips.

Notes

For extra depth, toast the spices in the skillet after sautéing aromatics for 30 seconds before adding to the slow cooker. Chili tastes even better the next day. If too thick, stir in a splash of broth; if too thin, cook uncovered on high for 20-30 minutes.
