Cozy Slow Cooker Spiked Hot Chocolate (Easy & Boozy)

A rich, velvety slow cooker hot chocolate with a grown-up twist—bourbon and a pinch of cayenne. Perfect for cozy nights, holiday gatherings, or a quiet evening in.

  • 4 cups whole milk (960 ml)
  • 1 cup heavy cream (240 ml)
  • 8 oz semi-sweet chocolate chips (225 g)
  • 1/4 cup unsweetened cocoa powder (25 g)
  • 1/4 cup granulated sugar (50 g)
  • 1 tbsp vanilla extract (15 ml)
  • 1/2 tsp ground cinnamon
  • 1/8 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/2 cup bourbon or dark rum (120 ml, or to taste)

Instructions

  1. In a small bowl, whisk together the cocoa powder, sugar, cinnamon, cayenne, and salt.
  2. Pour the whole milk and heavy cream into your slow cooker. Add the dry ingredient mixture and whisk until well combined.
  3. Add the semi-sweet chocolate chips and stir.
  4. Cover and cook on LOW for 2 hours. About halfway through, give it a good stir to ensure even melting.
  5. After 2 hours, turn the slow cooker to WARM. Stir in the vanilla extract and bourbon (or dark rum). Taste and adjust sweetness or booze level as desired.
  6. Ladle into mugs and serve immediately with your favorite toppings.

Notes

For a non-alcoholic version, omit the bourbon and add an extra splash of vanilla. For dairy-free, use oat milk and full-fat coconut cream. Keep on WARM setting for serving; do not let it boil. If too thick, stir in a splash of warm milk.
