Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts (about 2–3 breasts)
  • 1/2 cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 2 tablespoons olive oil (or oil from sun-dried tomato jar)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste (start with 1 tsp salt, 1/2 tsp pepper)
  • Fresh basil or parsley for garnish
  • 1/2 cup small pasta like ditalini or orzo (optional)

Instructions

  1. Pat chicken breasts dry and season generously with salt and black pepper.
  2. Heat olive oil in a large Dutch oven over medium-high heat until shimmering.
  3. Sear chicken breasts for 4-5 minutes per side until golden brown. Transfer to a plate (chicken will not be cooked through).
  4. Reduce heat to medium. Add onion, carrots, and celery; cook 5-6 minutes until softened, scraping up browned bits.
  5. Stir in garlic and sun-dried tomatoes; cook 1 minute until fragrant.
  6. Add oregano and red pepper flakes; stir 30 seconds. Pour in 1/2 cup chicken broth and deglaze the pot.
  7. Add remaining 3.5 cups broth and return chicken (with juices) to pot. Bring to a gentle boil, then reduce heat to low, cover, and simmer 15-20 minutes.
  8. Remove chicken to a cutting board; shred with two forks. Return shredded chicken to pot.
  9. Reduce heat to low. Stir in heavy cream and Parmesan until melted and smooth. Adjust seasoning with salt and pepper.
  10. Ladle into bowls, garnish with fresh basil or parsley, and serve immediately with crusty bread.

Notes

For best results, don’t skip searing the chicken—it adds deep flavor. Add cream and cheese only when soup is on low heat to prevent curdling. If adding pasta, cook separately and add to each bowl to avoid sogginess. Soup keeps in the fridge for up to 4 days and flavors improve overnight. To freeze, omit cream and add after thawing and reheating.
