  • ¼ cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger (optional)

  • ⅓ cup powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 250°F (120°C). Line two rimmed baking sheets with parchment paper.
  2. In a large mixing bowl, combine 9 cups Chex cereal, 1 ½ cups pecan halves, 1 cup whole almonds (if using), and 1 cup mini pretzels. Toss gently to distribute.
  3. In a small saucepan over medium heat, combine ½ cup cubed unsalted butter, ⅔ cup pure maple syrup, and ¼ cup packed light brown sugar. Stir occasionally until butter is melted and sugar is dissolved, about 3-4 minutes. Do not let it boil.
  4. Remove saucepan from heat and whisk in 2 teaspoons ground cinnamon, ½ teaspoon nutmeg, ¼ teaspoon ginger (if using), ½ teaspoon salt, and 1 teaspoon vanilla extract.
  5. Slowly pour the warm maple mixture over the cereal mixture. Use a spatula to gently fold and toss until everything is evenly coated.
  6. Divide the coated mixture evenly between the two prepared baking sheets, spreading into a single layer. Bake for 20 minutes, then stir gently. Return to oven and bake for another 15-20 minutes, until coating is set and cereal is lightly golden.
  7. Let the Chex mix cool on the baking sheets for at least 30 minutes without stirring. It will crisp up as it cools.
  8. Once completely cool, transfer to a large bowl and, if desired, sprinkle with ⅓ cup powdered sugar. Toss gently to coat.

Notes

For best results, use pure maple syrup and good-quality cinnamon. The coating will seem thick at first but will thin out as you toss. On humid days, the mix may take longer to crisp up. The flavors meld and improve after a day or two. Store in an airtight container at room temperature for up to 2 weeks. To re-crisp, spread on a baking sheet and bake at 300°F for 5 minutes.
