Cozy Homemade Pumpkin Chai Latte with Oat Milk (Easy Recipe)

A quick and easy pumpkin chai latte made with real pumpkin puree, oat milk, and a homemade chai spice blend. This cozy drink comes together in under 10 minutes and tastes better than any coffee shop version.

  • 1 ½ cups (360 ml) oat milk (preferably unsweetened barista edition)
  • 2 tablespoons (30 g) pumpkin puree (100% pumpkin, not pie filling)
  • 2 bags chai tea or 1 tablespoon loose-leaf chai
  • 12 tablespoons (1530 ml) maple syrup (Grade A dark amber preferred)
  • ½ teaspoon (2.5 ml) pure vanilla extract
  • ½ teaspoon (1.5 g) ground cinnamon (Saigon cinnamon recommended)
  • ¼ teaspoon (0.5 g) ground ginger
  • ¼ teaspoon (0.5 g) ground cardamom
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon ground nutmeg
  • Tiny pinch black pepper (optional)
  • For topping: coconut whipped cream, extra cinnamon, star anise (optional)

Instructions

  1. Brew the chai tea: In a small saucepan, bring ½ cup (120 ml) water to a gentle boil. Remove from heat, add chai tea bags (or loose-leaf chai in a strainer), and steep for 5 minutes.
  2. While the tea steeps, mix the spices: In a small bowl, combine cinnamon, ginger, cardamom, cloves, nutmeg, and black pepper (if using).
  3. Heat the oat milk: Remove tea bags from the saucepan. Add oat milk and pumpkin puree. Whisk continuously over medium heat until pumpkin is fully incorporated and milk is steaming (about 3-4 minutes). Do not boil.
  4. Add sweetener and spices: Whisk in maple syrup, vanilla extract, and the spice blend. Taste and adjust sweetness or spice as desired.
  5. Froth if desired: Transfer about ¼ cup of the hot mixture to a separate container and froth with a handheld frother until foamy. Pour back into the saucepan and stir gently.
  6. Pour and serve: Pour into a mug. Top with coconut whipped cream, a dusting of cinnamon, and a star anise if desired. Serve immediately.

Notes

For a stronger pumpkin flavor, add an extra tablespoon of pumpkin puree. To avoid lumps, whisk well or use an immersion blender. Oat milk should not be boiled to prevent separation. The spice blend can be made in bulk and stored in an airtight jar for weeks. Leftover latte can be refrigerated for up to 2 days; reheat on the stovetop, not in the microwave.
