  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice

Instructions

  1. Make the herb butter: In a small bowl, combine the softened butter, minced garlic, chopped parsley, thyme, rosemary, dried oregano, salt, and pepper. Mix with a fork until evenly distributed.
  2. Prep the chicken: Pat the chicken breasts dry with paper towels. Season both sides lightly with a pinch of salt and pepper.
  3. Apply the herb butter: Spread the herb butter generously over each chicken breast. If using skin-on breasts, gently loosen the skin and spread some butter underneath.
  4. Layer in the crockpot: Pour the chicken broth into the bottom of the crockpot. Place the buttered chicken breasts in a single layer in the pot.
  5. Add remaining butter: Dollop any leftover herb butter on top of the chicken breasts.
  6. Cook low and slow: Cover and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours. Low and slow is recommended for best tenderness.
  7. Check for doneness: The chicken is done when it reaches an internal temperature of 165°F in the thickest part. Juices should run clear with no pink.
  8. Add the lemon juice: Once the chicken is done, drizzle the fresh lemon juice over the top.
  9. Rest and serve: Let the chicken rest in the crockpot with the lid off for about 5 minutes. Transfer to a serving platter and spoon the herb butter sauce over the top. Serve whole or shredded.

For best results, use room temperature butter and thaw chicken completely before cooking. Don’t lift the lid during cooking.
