Ingredients

Scale
  • 8 ounces block mozzarella cheese (whole milk preferred)
  • 1 small ghost-shaped cookie cutter (about 2 inches wide)
  • 8 ounces sharp cheddar cheese, sliced
  • 6 ounces brie cheese, left whole
  • 4 ounces prosciutto, thinly sliced
  • 4 ounces salami, sliced
  • 1 cup candy corn (classic Brach’s brand works great)
  • 1 cup candy pumpkins (little orange ones)
  • 1 cup pretzel sticks
  • 1 cup mixed nuts (roasted salted almonds and cashews)
  • 1 cup seedless red grapes
  • 1 cup dried apricots
  • Fresh rosemary sprigs for garnish (optional)
  • 1/2 cup pumpkin butter (store-bought or homemade)
  • 1/4 cup honey

Instructions

  1. Make the cheese ghosts (5 minutes): Slice the block of mozzarella into 1/4-inch thick slabs. Press the ghost cookie cutter firmly into each slab. Gently push the ghost out with your fingers. If the cheese sticks, dip the cutter in cold water between cuts. You should get about 8-10 ghosts. Place them on a plate and refrigerate.
  2. Prep the fruits and nuts (3 minutes): Rinse the grapes and pat them dry. Pour the pretzels and mixed nuts into small bowls. Arrange the dried apricots on a small plate.
  3. Arrange the meats (2 minutes): Fold the prosciutto slices into loose ribbons. Fan out the salami slices in a small pile. Place these on opposite corners of your board.
  4. Place the cheeses (2 minutes): Set the brie wheel in the center of the board. Arrange the sliced cheddar in a fan pattern next to it. Scatter the cheese ghosts around the board, spacing them out.
  5. Add the sweets (3 minutes): Pour the candy corn and candy pumpkins into small bowls or directly onto the board in little clusters. Create a small ‘candy corn river’ that winds through the board.
  6. Fill the gaps (2 minutes): Use the grapes, pretzels, and nuts to fill any empty spaces. Tuck rosemary sprigs here and there for a pop of green.
  7. Add the dips (1 minute): Spoon the pumpkin butter into a small bowl and drizzle honey over the top. Place it near the brie.
  8. Final check (1 minute): Step back and look at your board. Add more candy corn if it looks sparse. Trust your eye.

Notes

Keep cheese ghosts cold until serving to maintain shape. Assemble board no more than an hour before serving to prevent crackers from getting soft. For best results, use a firm block of mozzarella, not pre-sliced. Store leftover cheese ghosts in an airtight container with a paper towel for up to 3 days.
