Cozy Crockpot Chicken and Dumplings Recipe Easy Hearty Comfort Meal

An easy, hearty comfort meal made by slow cooking tender chicken thighs and soft, pillowy dumplings in a rich broth. Perfect for busy days and cozy nights.

  • 4 boneless, skinless chicken thighs (about 1.5 lbs / 700 g)
  • 4 cups (32 fl oz) low-sodium chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh, finely chopped)
  • 1 teaspoon dried parsley (or fresh, for garnish)
  • Salt and black pepper, to taste
  • 2 tablespoons unsalted butter
  • 1 ½ cups (6.7 oz) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup (6 fl oz) whole milk (or dairy-free milk alternative)
  • 2 tablespoons unsalted butter, melted
  • Optional: fresh chopped parsley or chives for dumplings

Instructions

  1. Trim excess fat from chicken thighs and season lightly with salt and pepper. Dice onion, slice carrots and celery, and mince garlic (about 10 minutes prep).
  2. Place chicken thighs at the bottom of the crockpot. Add onions, carrots, celery, and garlic on top. Pour in chicken broth. Sprinkle thyme, parsley, salt, and pepper. Add butter pieces evenly.
  3. Cover and cook on low for 5 to 6 hours or on high for about 3 hours until chicken is tender and easily shredded.
  4. While chicken cooks, whisk together flour, baking powder, and salt in a bowl. Stir in milk and melted butter until just combined; avoid overmixing.
  5. Remove chicken from crockpot and shred with two forks. Return shredded chicken to crockpot and stir gently.
  6. Drop spoonfuls of dumpling batter over the hot broth mixture in the crockpot. Do not stir.
  7. Cover and cook on high for 45 minutes to 1 hour until dumplings are puffed and cooked through.
  8. Stir in fresh chopped parsley if desired. Taste and adjust seasoning with salt and pepper. Serve hot.

Notes

Do not stir dumplings after adding to crockpot to keep them fluffy. If broth is too thick after cooking, add a splash of chicken broth or water to loosen. Prep veggies the night before to save time. Use chicken thighs for juiciness. For gluten-free, substitute flour with gluten-free baking blend. Dumplings can get dense if overcooked; test with toothpick for doneness.
