Cozy Cinnamon Sugar Pretzel Bites: Easy 30-Minute Recipe

  • 2 ¼ cups (280g) all-purpose flour
  • 1 packet (2 ¼ teaspoons) instant yeast
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • ¾ cup (180ml) warm water (around 110°F)
  • 2 tablespoons unsalted butter, melted
  • 4 tablespoons (½ stick) unsalted butter, melted (for coating)
  • ½ cup (100g) granulated sugar (for coating)
  • 2 tablespoons ground cinnamon
  • Pinch of salt (for coating)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, instant yeast, granulated sugar, and salt. Pour in the warm water and melted butter. Stir with a wooden spoon until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface. Knead for 3 to 4 minutes until smooth and elastic. The dough should be soft and slightly tacky but not sticky.
  4. Divide the dough into 4 equal pieces. Roll each piece into a rope about 12 inches long. Cut each rope into 12 to 15 bite-sized pieces (about 1-inch wide).
  5. Place the dough pieces on the prepared baking sheet, spacing them about an inch apart.
  6. Bake immediately for 10 to 12 minutes until golden brown on top and puffed up.
  7. While the bites bake, mix the granulated sugar and ground cinnamon together in a small bowl. Add a tiny pinch of salt and whisk to combine. Melt the remaining 4 tablespoons of butter in a separate bowl.
  8. As soon as the pretzel bites come out of the oven, transfer them to a large bowl. Pour the melted butter over the top and toss gently with a spatula until every bite is coated. Then sprinkle the cinnamon sugar mixture over the buttery bites and toss again until completely covered.
  9. Serve warm immediately.

Notes

Don’t let the baked bites sit before coating; the steam helps the butter soak in. Work quickly while they’re hot. For a dairy-free version, use vegan butter or coconut oil. For gluten-free, use a 1-to-1 gluten-free flour blend and bake an extra 2 minutes.
