  • 1/4 cup light brown sugar, packed

  • 1 tablespoon melted butter, for brushing
  • 1 tablespoon turbinado sugar, for sprinkling

Instructions

  1. Preheat oven to 400°F (200°C). Place a 10-inch cast iron skillet in the oven to preheat.
  2. In a medium bowl, combine sliced peaches, 1/2 cup granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, vanilla extract, and a pinch of salt. Toss gently and let sit for 10 minutes.
  3. In a large bowl, whisk together flour, baking powder, baking soda, 1 tablespoon granulated sugar, and 1/2 teaspoon salt. Grate frozen butter into the flour mixture using a box grater. Toss with fingers until mixture resembles coarse meal with some pea-sized butter pieces.
  4. Make a well in the center and pour in cold buttermilk. Stir with a fork just until dough comes together; it will be shaggy and sticky. Do not overmix.
  5. Carefully remove hot skillet from oven. Pour peach filling into skillet and spread evenly. Drop spoonfuls of biscuit dough over the peaches, leaving them rustic and craggy.
  6. Brush biscuit tops with melted butter and sprinkle with turbinado sugar. Bake for 25-30 minutes, until biscuits are golden brown and filling is bubbling. If browning too quickly, tent with foil for last 10 minutes.
  7. Remove from oven and cool on a wire rack for at least 15 minutes before serving. Serve warm with vanilla ice cream or heavy cream.

Notes

For flakiest biscuits, keep butter and buttermilk very cold. Do not overmix dough. Let cobbler rest 15 minutes before serving to allow filling to set. If using frozen peaches, do not thaw first. For gluten-free, use 1:1 gluten-free flour blend. For vegan, use plant-based butter and buttermilk substitute.
