Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Stir frequently as the butter melts, foams, and begins to brown (about 5-7 minutes). Remove from heat and let cool slightly.
  2. Prepare the zucchini: Shred 1 1/2 cups zucchini using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel.
  3. Mix dry ingredients: In a large bowl, whisk together 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt.
  4. Cream sugars and eggs: In a separate bowl, beat 3/4 cup granulated sugar, 1/4 cup brown sugar, and 2 large eggs until light and fluffy (2-3 minutes). Stir in 1 teaspoon vanilla extract.
  5. Combine wet ingredients: Slowly pour the warm brown butter into the sugar and egg mixture, stirring continuously.
  6. Fold in zucchini: Add shredded zucchini to the wet mixture and stir gently until combined.
  7. Combine wet and dry: Pour wet ingredients into dry ingredients and fold gently with a spatula until just combined.
