  • 1/2 cup (60 grams) chopped walnuts or pecans, toasted (optional)

Instructions

  1. Brown the butter: Place 1/2 cup (115 grams) unsalted butter in a medium saucepan over medium heat. Stir frequently as it melts, foams, then turns golden brown with little brown specks, about 5-7 minutes. Remove from heat and transfer to a heatproof bowl to cool slightly.
  2. Mash the bananas in a large mixing bowl until mostly smooth but still a bit chunky, about 2-3 minutes.
  3. Add granulated sugar and brown sugar to the bananas. Crack in eggs and whisk gently until combined.
  4. Pour in the cooled browned butter and vanilla extract. Stir until well combined.
  5. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
  6. Fold the dry ingredients into the wet banana mixture gently with a spatula until no streaks of flour remain. Avoid overmixing.
  7. Optional: Stir in Greek yogurt or sour cream and toasted nuts if desired.
  8. Grease or line a 9×5-inch loaf pan with parchment paper. Pour batter evenly into the pan and smooth the top.
  9. Bake in a preheated 350°F (175°C) oven for 55-65 minutes. Check doneness with a toothpick; it should come out clean or with a few moist crumbs.
  10. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely.
