  • 3 medium ripe bananas, mashed
  • 1 ½ cups (360ml) milk (dairy or plant-based)
  • ⅓ cup (65g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 4 tablespoons (60g) unsalted butter
  • 1 cup (120g) pecans, roughly chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or nonstick spray.
  2. In a skillet over medium heat, melt the unsalted butter. Stir continuously as it foams and turns golden brown with a nutty aroma (about 4-5 minutes). Add the chopped pecans and stir for 1-2 minutes until toasted and coated. Remove from heat and set aside to cool slightly.
  3. In a large bowl, combine rolled oats, baking powder, ground cinnamon, and salt. Mix evenly.
  4. In another bowl, whisk together mashed bananas, milk, brown sugar, eggs, and vanilla extract until smooth.
  5. Pour the wet mixture over the dry ingredients and gently fold together with a spatula or wooden spoon until just combined.
  6. Reserve a small handful of browned pecans for topping, then fold the rest into the batter evenly.
  7. Spread the batter evenly in the prepared baking dish. Sprinkle the reserved pecans on top.
  8. Bake for 35-40 minutes until edges are golden and the center is set but still moist. A toothpick inserted should come out mostly clean with a few moist crumbs.
  9. Let the baked oatmeal rest for 10 minutes before serving to firm up.

Notes

Use ripe bananas with brown spots for best sweetness. Microwave bananas for 30 seconds if not ripe enough. Watch butter carefully when browning to avoid burning. Do not overmix batter to maintain custardy texture. Can be made vegan by substituting eggs with flax eggs and using plant-based milk and vegan butter.
