This copycat Starbucks pumpkin cold foam cold brew is a quick and easy homemade version of the popular fall drink. It features bold cold brew coffee topped with a sweet, spiced pumpkin cold foam that tastes cleaner and fresher than the original.

  • 1 ½ cups (360 ml) cold brew coffee, strong and unsweetened
  • ¼ cup (60 ml) whole milk
  • 2 tablespoons (30 ml) heavy cream
  • 1 ½ tablespoons (22 g) pumpkin purée (100% pumpkin, not pie filling)
  • 1 tablespoon (15 ml) vanilla syrup (or 1 teaspoon vanilla extract plus 1 teaspoon sugar)
  • ¼ teaspoon pumpkin pie spice
  • Ice cubes (enough to fill a 16-ounce glass)
  • Optional garnish: pinch of cinnamon or pumpkin pie spice, cinnamon stick

Instructions

  1. Fill a tall glass about ¾ full with ice cubes. Pour 1 ½ cups (360 ml) cold brew coffee over the ice, leaving about 2 inches of space at the top. Stir gently to chill the coffee evenly.
  2. In a small bowl or jar, combine ¼ cup (60 ml) whole milk, 2 tablespoons (30 ml) heavy cream, 1 ½ tablespoons (22 g) pumpkin purée, 1 tablespoon (15 ml) vanilla syrup (or 1 teaspoon vanilla extract plus 1 teaspoon sugar), and ¼ teaspoon pumpkin pie spice. Whisk gently with a fork until smooth and no lumps remain.
  3. Using a handheld milk frother, froth the mixture for 45 to 60 seconds until it doubles in volume and becomes thick and creamy, like melted soft serve. Alternatively, blend in a small blender on low for 20 seconds then high for 10 seconds.
  4. Using a spoon, gently scoop the pumpkin cold foam onto the top of the cold brew, starting around the edges and filling the center. Do not pour—scooping keeps the layers separate.
  5. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon over the foam. Add a cinnamon stick if desired. Serve immediately with a straw.

Notes

For extra thick foam, chill the milk and cream in the freezer for 5 minutes before frothing. Make the cold foam right before serving—it deflates after about 10 minutes. Use a spoon to scoop the foam on top to maintain layers. If using vanilla extract instead of syrup, mix with a little sugar to help it dissolve.
