  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice, fresh
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg, freshly grated if possible
  • ¼ teaspoon salt
  • 1 tablespoon cornstarch
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup light brown sugar, packed
  • ½ cup chopped pecans, toasted
  • ½ cup unsalted butter, cold and cut into small cubes
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Toast the pecans: Spread the ½ cup of chopped pecans on a small baking sheet. Bake for 5-7 minutes, stirring halfway through, until fragrant and slightly darker. Set aside to cool.
  3. Prepare the apples: Peel, core, and slice the apples into ¼-inch thick slices. Place in a large bowl. Add granulated sugar, lemon juice, cinnamon, nutmeg, salt, and cornstarch. Toss until evenly coated. Let sit while making the topping.
  4. Make the oat pecan crumble topping: In a separate large bowl, combine oats, flour, brown sugar, salt, and toasted pecans. Stir to distribute. Add cold cubed butter and vanilla extract. Use a pastry cutter, two forks, or your fingertips to work the butter into the dry ingredients until the mixture looks like coarse sand with some pea-sized butter pieces remaining.
  5. Layer the crisp: Press half of the crumble mixture evenly into the bottom of the prepared baking dish. Spread the apple mixture over the bottom crumble layer. Sprinkle the remaining crumble topping over the apples, covering them completely. Do not press it down.
  6. Bake: Place the dish on a baking sheet and bake for 40-45 minutes, until the topping is golden brown, the apples are tender, and the juices are bubbling around the edges. If the topping browns too quickly, tent loosely with aluminum foil.
  7. Cool slightly before serving: Let the crisp rest on a wire rack for at least 10-15 minutes before serving.

For best results, use cold butter and old-fashioned oats. Toasting the pecans before adding them to the topping enhances their flavor and keeps them crunchy. Let the crisp rest for 10-15 minutes after baking to allow the juices to thicken.
