  • 1 lb ground turkey (450 g)
  • 1 cup mashed potatoes (240 ml), smooth and creamy
  • 1/4 cup brown sugar (50 g), light brown sugar preferred
  • 1/4 cup ketchup (60 ml)
  • 1 tbsp Dijon mustard
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs (60 g), plain or whole wheat
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 2 tbsp milk (30 ml), any kind including dairy-free
  • Salt to taste (kosher recommended)
  • Freshly cracked black pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with oil or non-stick spray.
  2. Prepare the mashed potatoes: stir well if leftover or make sure homemade mashed potatoes are creamy and smooth, adding milk if needed.
  3. Heat 1 tablespoon of oil in a skillet over medium heat. Sauté the finely chopped onion until translucent, about 5 minutes. Add minced garlic and cook for 1 more minute until fragrant. Set aside to cool slightly.
  4. In a large bowl, combine ground turkey, sautéed onion and garlic, breadcrumbs, egg, Worcestershire sauce, milk, salt, and pepper. Mix gently until just combined to avoid toughness.
  5. Spoon about 2 tablespoons (30 g) of the turkey mixture into each muffin cup, pressing down gently. Add about 1 tablespoon (15 g) of mashed potatoes in the center. Top with another 2 tablespoons (30 g) of turkey mixture, covering the potato swirl and smoothing the top.
  6. In a small bowl, whisk together brown sugar, ketchup, and Dijon mustard until smooth to make the glaze.
  7. Brush the glaze generously over each muffin.
  8. Bake for 25-30 minutes until cooked through (internal temperature 165°F / 74°C) and glaze is bubbly and slightly browned.
  9. Let the muffins rest for 5 minutes before removing from the tin. Garnish with chopped fresh parsley if desired and serve warm.

Notes

If glaze browns too fast, tent muffins loosely with foil. Assemble muffins the night before and bake fresh for convenience. For gluten-free, substitute breadcrumbs with almond flour or gluten-free crumbs. Mashed potato swirl keeps muffins moist; sweet potato or cauliflower puree can be used as alternatives. Avoid overmixing meat to prevent toughness.
