Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a light-colored saucepan over medium heat. Swirl occasionally as it melts. It will foam, then subside, and brown specks will form at the bottom. When it smells nutty and turns amber (about 5-7 minutes), remove from heat and pour into a heatproof bowl. Cool for 10 minutes.
  2. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on long sides. Grease exposed ends.
  3. In a large bowl, mash bananas with a fork until mostly smooth (a few lumps are fine). You should have about 1 1/2 cups.
  4. To the bananas, add cooled brown butter, 1/2 cup granulated sugar, 1/4 cup packed brown sugar, 2 room-temperature eggs, 1 teaspoon vanilla, and 1/3 cup yogurt or sour cream. Whisk until smooth and glossy.
  5. In a medium bowl, whisk together 1 1/2 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon.
  6. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are okay). Do not overmix.
  7. Make streusel: In a small bowl, combine 1/2 cup flour, 1/4 cup packed brown sugar, 2 tablespoons granulated sugar, 1 1/2 teaspoons cinnamon, and a pinch of salt. Add 3 tablespoons cold cubed butter. Cut in with a pastry cutter or forks until mixture resembles coarse sand with some pea-sized clumps.
  8. Pour batter into prepared pan and spread evenly. Sprinkle streusel on top, pressing gently to adhere.
  9. Bake at 350°F for 50-60 minutes. Start checking at 50 minutes: insert a toothpick into center; if it comes out clean or with a few moist crumbs, it’s done. If streusel browns too quickly (around 30 minutes), tent with foil.
  10. Cool in pan for 15 minutes, then lift out using parchment and transfer to a cooling rack. Cool completely (at least 1 hour) before slicing.

Notes

Don’t rush the brown butter; watch it closely on medium heat. Use a light-colored pan to see the color change. Measure flour by spooning and leveling. Do not overmix the batter.
