  • 4 (6-ounce) salmon fillets, skin on or off
  • 2 tablespoons chili paste (sambal oelek, sriracha, or gochujang)
  • 3 tablespoons fresh lime juice (about 2 limes)
  • 2 tablespoons honey
  • 1 tablespoon olive oil, plus more for the pan
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 cups cooked rice (jasmine, basmati, brown, or quinoa)
  • 1 large avocado, sliced
  • 1 English cucumber, thinly sliced
  • 45 radishes, thinly sliced
  • 1/4 cup fresh cilantro, roughly chopped
  • 23 green onions, sliced
  • 1 tablespoon sesame seeds (optional, for garnish)
  • For the Quick Pickled Onions (optional):
  • 1 small red onion, thinly sliced
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

Instructions

  1. Start the rice: Rinse 1 cup of jasmine rice under cold water until the water runs clear. Add to a rice cooker or pot with 1 1/2 cups water and a pinch of salt. Cook according to device instructions (about 15-20 minutes). If using leftover rice, warm it before serving.
  2. Make the quick pickled onions (if using): In a small saucepan, combine rice vinegar, water, sugar, and salt. Bring to a simmer over medium heat, stirring until sugar and salt dissolve. Remove from heat, add sliced red onion, and let sit for at least 10 minutes. They will turn pink and soften.
  3. Prepare the chili-lime glaze: In a small bowl, whisk together chili paste, fresh lime juice, honey, olive oil, and minced garlic until smooth. Season with a pinch of salt and black pepper. Taste and adjust honey or chili to preference.
  4. Prep the salmon: Pat salmon fillets dry with a paper towel. Season both sides lightly with salt and pepper. Remove any pin bones with tweezers if present.
  5. Cook the salmon: Heat a large skillet over medium-high heat and add a drizzle of olive oil. Once shimmering, place salmon fillets skin-side down (if using skin-on). Cook for 4-5 minutes without moving, until golden-brown crust forms. Flip carefully and cook for another 2-3 minutes. Pour chili-lime glaze over the salmon and let it bubble and caramelize for about 1 minute, spooning glaze over the top. Remove from heat.
  6. Assemble the bowls: Divide warm rice among four bowls. Place a salmon fillet on each bed of rice. Arrange sliced avocado, cucumber, and radishes around the salmon. Sprinkle with fresh cilantro, sliced green onions, quick pickled onions (if using), and sesame seeds. Drizzle any remaining glaze from the pan over the top.
  7. Serve immediately with extra lime wedges on the side.

Notes

Pat salmon dry for a good sear. Don’t overcrowd the pan; cook in batches if needed. Watch the glaze carefully as honey can burn quickly. Let salmon rest for a minute after cooking. For a low-carb option, serve over cauliflower rice. The pickled onions can be made ahead and stored in the fridge for up to 2 weeks.
