  • Honey (2 tablespoons)
  • Pickles (1 cup), dill pickle spears, cornichons, or pickled okra
  • Olives (½ cup), Castelvetrano or kalamata
  • Grape or Cherry Tomatoes (1 cup), halved or whole
  • Roasted Red Peppers (½ cup), drained and sliced into strips
  • Crackers or Crostini (about 2 cups), mix of buttery crackers, water crackers, and sliced baguette toast points
  • Nuts (½ cup), toasted almonds, pecans, or cashews
  • Fresh Fruit (optional, 1 cup), red grapes or sliced apples
  • Fresh Herbs (for garnish), a few sprigs of rosemary or thyme

Instructions

  1. Prep the Smoked Sausage (5 minutes): Remove the sausage from its casing if it has one. Slice into ¼-inch thick rounds or diagonal ovals. If desired, lightly pan-sear the slices for 1–2 minutes per side in a dry skillet over medium heat until browned and slightly crispy.
  2. Slice the Cheeses (5 minutes): Cut the sharp cheddar into thin triangles or small cubes. Cube the pepper jack into bite-sized pieces (about ½-inch). Slice the gouda into thin wedges.
  3. Prepare the Dips (2 minutes): In a small bowl, whisk together the Dijon mustard and honey until smooth. Taste and adjust sweetness or tanginess as desired. Pour into a small ramekin.
  4. Arrange the Board (10 minutes): Place the small bowls of mustard dip, pickles, and olives on the board first. Then, arrange the smoked sausage slices in a loose, overlapping pattern. Add the cheese pieces around the sausage, grouping them by type.
  5. Fill in the Gaps (5 minutes): Add the tomatoes, roasted red pepper strips, and grapes or apple slices in the empty spaces. Sprinkle the nuts around. Tuck in the crackers and crostini around the edges. Garnish with fresh herbs.
