These quick maple roasted Brussels sprouts with bacon are a game-changing side dish that’s ready in 30 minutes with minimal cleanup. Crispy bacon, caramelized maple syrup, and tender sprouts make even skeptics ask for seconds.

Ingredients

Scale
  • 1 ½ pounds Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper, freshly ground
  • 6 slices thick-cut bacon, cut into 1-inch pieces
  • 3 tablespoons pure maple syrup
  • 1 tablespoon balsamic vinegar (optional)
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper.
  2. Rinse 1 ½ pounds Brussels sprouts under cold water and pat completely dry. Trim the tough stem ends, remove any yellow or damaged outer leaves, and cut each sprout in half lengthwise through the stem. Quarter any larger than a golf ball.
  3. Place the halved sprouts in a large mixing bowl. Add 3 tablespoons olive oil, ½ teaspoon kosher salt, and ¼ teaspoon black pepper. Toss well with your hands until every cut surface is coated.
  4. Spread the sprouts in a single layer on the prepared baking sheet, cut-side down if possible. Do not overcrowd.
  5. Scatter the 6 slices of cut bacon pieces evenly over the sprouts.
  6. Roast for 15 minutes. The bacon will sizzle and the sprouts will start to brown.
  7. After 15 minutes, remove the pan from the oven. Drizzle 3 tablespoons maple syrup evenly over everything. If using balsamic vinegar, add it now. Gently toss everything together with a spatula.
  8. Return the pan to the oven and roast for another 10-15 minutes, until the sprouts are tender and deep golden brown, and the bacon is crispy.
  9. Remove from the oven. Sprinkle with flaky sea salt while still hot. Let rest for 2-3 minutes before serving. Serve warm or at room temperature.

Notes

Dry sprouts thoroughly to ensure caramelization. Cut-side down is key for browning. Do not overcrowd the pan. Add maple syrup halfway through to prevent burning. Let rest after roasting for the caramelized coating to set. For extra crispy bacon, cut into smaller pieces or start in a cold oven.
