These mini football cookie cakes are soft, buttery, and topped with a simple chocolate frosting that sets up just firm enough to pipe those classic football laces. They are portable, festive, and come together in about 35 minutes—perfect for game day.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • ¼ cup (½ stick) unsalted butter, softened (for frosting)
  • ¼ cup unsweetened cocoa powder
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream the butter and sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed for about 2 minutes until light and fluffy. Scrape the sides of the bowl halfway through.
  3. Add the egg and vanilla: Beat in the egg and vanilla extract on low speed until just combined.
  4. Mix the dry ingredients: In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Combine wet and dry: Gradually add the flour mixture to the butter mixture, mixing on low speed until no streaks of flour remain. Do not overmix.
  6. Fold in the chocolate chips: Use a rubber spatula to gently fold the chocolate chips into the dough.
  7. Shape the cookie cakes: Scoop about 2 tablespoons of dough (roughly the size of a golf ball) and roll into a ball. Place on the prepared baking sheet, then gently press into an oval shape about ½-inch thick. Taper the ends slightly to look like a football. Repeat with remaining dough, spacing ovals about 2 inches apart. You should get about 12 cookie cakes.
  8. Bake: Bake for 10–12 minutes, rotating the pans halfway through. Edges should be set and lightly golden, centers still slightly soft. Cool on baking sheets for 5 minutes, then transfer to a cooling rack to cool completely.
  9. Make the frosting: While cookies cool, beat the softened butter in a medium bowl until smooth. Add cocoa powder, powdered sugar, milk, vanilla, and a pinch of salt. Beat on low until combined, then increase to medium and beat for 1 minute until fluffy. Adjust consistency with more milk or powdered sugar as needed.
  10. Pipe the laces: Transfer frosting to a piping bag or zip-top bag with a tiny corner snipped off. Pipe three straight lines across the center of each cookie cake, then two short perpendicular lines at the ends to mimic football laces.
  11. Let the frosting set: Allow frosting to set for about 15 minutes at room temperature before serving.

Notes

If your kitchen is warm, chill the shaped ovals in the fridge for 10 minutes before baking to prevent spreading. Use a kitchen scale for consistent sizing (about 30 grams per cookie cake). Rotate pans halfway through baking for even browning. Let cookies cool completely before frosting to prevent melting. Store in an airtight container at room temperature for up to 3 days. Unfrosted cookie cakes can be frozen for up to 2 months.
