  • 2 large eggs, room temperature

  • 1 cup light corn syrup (or honey)
  • 1/2 cup pure maple syrup (not pancake syrup)
  • 3 large eggs, lightly beaten
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/4 cup bourbon (e.g., Maker’s Mark)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups pecan halves or chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides. Grease if not using parchment.
  2. In a large bowl, combine brownie mix, 2 eggs, vegetable oil, and water. Stir until just combined (about 20 strokes). Do not overmix. Pour batter into prepared pan and spread evenly.
  3. In a medium bowl, whisk together corn syrup, maple syrup, 3 beaten eggs, melted butter, bourbon, vanilla extract, and salt until smooth (about 30 seconds). Fold in pecans gently.
  4. Pour pecan mixture evenly over brownie batter. Gently nudge pecans into an even layer if needed.
  5. Bake on middle rack for 40 to 45 minutes, until edges are set and center is slightly jiggly. A toothpick inserted into the brownie layer (not topping) should come out with moist crumbs. Tent with foil after 30 minutes if top browns too quickly.
  6. Cool completely in pan on a wire rack for at least 2 hours. For clean slices, refrigerate for 30 minutes after cooling, then lift using parchment and cut with a sharp knife.
