  • 8 oz Brie cheese
  • 8 oz Sharp cheddar cheese (preferably Cabot or Kerrygold)
  • 4 oz Gorgonzola or blue cheese (optional)
  • 2 Honeycrisp apples, thinly sliced
  • 2 Bosc pears, thinly sliced
  • 1 cup Red grapes, washed and stemmed
  • 1/2 cup Dried figs or dates
  • 1/4 cup Quince paste or membrillo (optional)
  • 4 oz Prosciutto, thinly sliced
  • 4 oz Salami, sliced into thin rounds (Genoa or soppressata)
  • 1 cup Mixed nuts (walnuts, pecans, or almonds, toasted if possible)
  • 1/2 cup Crackers or crostini (plain or rosemary-infused)
  • 1/4 cup Pumpkin seeds or pepitas
  • 2 tbsp Honey or fig jam
  • Fresh rosemary sprigs (for garnish)
  • Flaky sea salt
  • 1 tbsp Lime juice (for apples)

Instructions

  1. Prep the Fruit: Wash and dry the grapes. Slice the apples and pears into thin wedges (about 1/4-inch thick). Toss the apple slices with a squeeze of lime juice (about 1 tablespoon) to prevent browning. Set aside.
  2. Slice the Cheese: Cut the brie into wedges or leave whole. Slice the cheddar into thin triangles or cubes. Crumble the gorgonzola into small pieces. Arrange the cheese on the board first, spacing them out as anchor points.
  3. Add the Meats: Fold the prosciutto slices into loose ribbons or roll into rosettes. Lay them near the brie or cheddar. Arrange the salami rounds in a small pile or fan them out.
  4. Fill in with Fruit: Place apple and pear slices in small clusters around the cheese. Add grapes in little bunches. Tuck dried figs or dates into gaps. If using quince paste, cut into small cubes and place near the sharp cheddar.
  5. Add the Crunch: Pour nuts and pumpkin seeds into small bowls or directly onto the board in little piles. Arrange crackers or crostini in a single layer or stack neatly.
  6. Drizzle and Garnish: Drizzle honey over the brie or into a small bowl for dipping. Add a dollop of fig jam near the cheddar. Tuck fresh rosemary sprigs around the board. Sprinkle a pinch of flaky sea salt over the fruit and cheese.
  7. Final Check: Step back and look at your board. Fill any bare spots with extra crackers, nuts, or fruit. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours. If refrigerating, take it out 20 minutes before serving to let the cheese soften.

Notes

For best results, take cheese out of the fridge 30 minutes before assembling. Toast nuts in a dry pan for 5 minutes for extra flavor. Prep fruit and cheese up to 24 hours ahead and assemble just before serving. The board can be covered and refrigerated for up to 2 hours before serving.
