  • 68 ounces Genoa salami, sliced medium-thick
  • 4 ounces pepperoni, large diameter slices
  • 4 ounces capicola or soppressata (optional)
  • 6 ounces aged cheddar, sliced or cubed
  • 68 ounces brie, at room temperature
  • 6 ounces gouda or smoked gouda, sliced or cubed
  • 4 ounces manchego, sliced into thin wedges (optional)
  • 1 box water crackers
  • 1 package breadsticks or grissini
  • 1 small baguette, sliced thin
  • 1 cup red grapes
  • 1/2 cup dried apricots or figs
  • 1 cup cherry tomatoes
  • 1/2 cup cucumber slices
  • 1/2 cup olives (Castelvetrano or kalamata)
  • 1/2 cup pickles or cornichons
  • Small bowl of honey or fig jam
  • 1/2 cup nuts (Marcona almonds or candied pecans)
  • Fresh rosemary or thyme for garnish

Instructions

  1. Set out the cheeses: Take the brie out of the fridge and let it come to room temperature for about 20 minutes.
  2. Prepare the board: Place your football-shaped board on a flat surface. If using a rectangular board, mentally map out the football shape.
  3. Place the bowls first: Set small ramekins in the upper third of the board. Fill one with olives, one with honey or fig jam, and one with cornichons.
  4. Add the cheeses: Cut the cheddar and gouda into thin slices or cubes and arrange them in clusters around the bowls. Place the brie whole in the center of the board. Slice the manchego into thin wedges and fan them out near the edge.
  5. Add the meats: Fold the prosciutto into loose ribbons and place in small piles. Roll salami slices into roses and tuck near the cheese. Fan out pepperoni slices in a small cluster. Arrange capicola in loose folds next to the salami.
  6. Fill in with crackers and bread: Place water crackers in small stacks along the edges. Tuck breadsticks between cheese clusters. Arrange baguette slices in a fan pattern near the brie.
  7. Add the fruits and vegetables: Scatter red grapes in small clusters. Tuck dried apricots near the prosciutto. Place cherry tomatoes and cucumber slices in the gaps.
  8. Add the nuts and garnishes: Sprinkle almonds or pecans in remaining gaps. Tuck sprigs of fresh rosemary or thyme around the edges.
  9. Step back and adjust: Look at the board from above. Move things around until it feels full and inviting, with the football shape clearly visible.
  10. Serve immediately or cover and refrigerate: If serving within an hour, leave at room temperature. If making ahead, cover loosely with plastic wrap and refrigerate. Take out 20 minutes before serving.

Let the brie come to room temperature for 20 minutes before serving for best flavor. If making ahead, keep crackers separate and add just before serving to maintain crispness. The board can be assembled up to 24 hours in advance; cover loosely with plastic wrap and refrigerate.
