This overnight cinnamon roll casserole is a weekend tradition that brings everyone to the table. With only 10 minutes of prep the night before, you can wake up to a warm, gooey, pull-apart breakfast topped with a dreamy cream cheese glaze.

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing (e.g., Pillsbury Grands!)
  • 4 large eggs, room temperature
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons milk (for glaze consistency)

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each cinnamon roll into quarters (about 1-inch pieces).
  3. Scatter the cinnamon roll pieces evenly in the prepared baking dish. Do not press them down.
  4. In a large mixing bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and salt until completely combined and slightly frothy (about 30 seconds).
  5. Slowly pour the custard mixture evenly over the cinnamon roll pieces. Gently press down any dry pieces with a spatula to coat. Cover tightly with plastic wrap or aluminum foil and refrigerate for at least 8 hours, up to 24 hours.
  6. Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit on counter for 15 minutes. Uncover and drizzle melted butter evenly over the top.
  7. Bake on the middle rack for 35-40 minutes, until top is golden brown and center is set (edges bubbling, knife inserted in center comes out clean). If browning too fast, tent loosely with foil for last 10 minutes.
  8. While casserole bakes, make glaze: In a medium bowl, beat softened cream cheese until smooth. Add reserved icing from cinnamon roll cans, powdered sugar, and vanilla extract. Beat until smooth and creamy. Add milk, 1 tablespoon at a time, until pourable consistency.
  9. Let casserole cool for 5-10 minutes. Drizzle cream cheese glaze generously over warm casserole. Serve immediately.

Notes

For best results, use room temperature ingredients. Do not soak rolls longer than 24 hours to avoid mushiness. Let casserole rest 5-10 minutes before glazing to prevent glaze from melting. Double the glaze if desired. Line dish with parchment paper for easy cleanup.
