  • 4–6 ounces salami (Genoa or peppered)
  • 3–4 ounces soppressata (optional, or substitute pepperoni)
  • 8 ounces brie (double-cream), sliced
  • 4–6 ounces sharp cheddar, cubed or sliced
  • 4 ounces goat cheese log, sliced or crumbled
  • 3–4 sprigs fresh rosemary
  • 1/2 cup fresh cranberries
  • 1/2 cup dried cranberries
  • 1/4 cup fig jam or apricot preserves
  • Honey, for drizzling
  • 8–10 ounces crackers (mix of water crackers, rosemary crackers, buttery rounds)
  • 1/2 cup toasted almonds or pecans
  • 1/2 cup mixed olives (green and kalamata)
  • 1/4 cup pomegranate seeds (optional)
  • Fresh bay leaves (optional, for garnish)
  • Edible flowers (optional, for garnish)

Instructions

  1. Place a small bowl of fig jam or apricot preserves in the center of a large round board or platter. If using honey, place it in a separate small bowl next to the jam.
  2. Arrange fresh rosemary sprigs in a loose circle around the center bowl to create a base ring.
  3. Place brie slices in a ring around the rosemary, overlapping slightly. Scatter cheddar cubes and goat cheese rounds around the brie, creating small clusters.
  4. Fold prosciutto slices into loose ribbons (fold in half, then in half again) and place in clusters around the wreath. Repeat with salami and soppressata, distributing evenly between cheese pieces.
  5. Sprinkle fresh and dried cranberries around the board, tucking them into gaps and edges.
  6. Scatter nuts and olives around the wreath, placing olives in small clusters to prevent rolling.
  7. Arrange crackers around the outer edge of the board, fanning them out slightly for easy grabbing.
  8. Drizzle honey over the brie and goat cheese. Sprinkle a few fresh rosemary needles over the top. Add pomegranate seeds, bay leaves, or edible flowers if desired.

Notes

Let cheese sit at room temperature for 15-20 minutes before assembling for best texture. Warm the jam for 10 seconds in the microwave to make it easier to spread. Add crackers right before serving to keep them crunchy. If the board looks sparse, add more crackers; if too crowded, remove a few items. The wreath shape is forgiving—call it ‘rustic’ if needed.
