  • 6 fresh jalapeños, medium-sized and firm
  • 12 slices thin-cut bacon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup, then place a wire cooling rack on top. Lightly spray the rack with nonstick cooking spray.
  2. Wearing gloves, slice each jalapeño in half lengthwise. Use a small spoon to scrape out the seeds and white membranes. Place the hollowed jalapeño halves on a plate and set aside.
  3. In a small mixing bowl, combine the softened cream cheese, shredded cheddar, garlic powder, smoked paprika, salt, and pepper. Stir until smooth and well combined.
  4. Using a small spoon or butter knife, fill each jalapeño half with the cream cheese mixture. Don’t overstuff—you want the filling level with the cut edge, not mounded.
  5. Take one slice of bacon and wrap it around each stuffed jalapeño half. Start at one end and wrap snugly but not too tight. The bacon should overlap slightly as you go. Tuck the end of the bacon underneath the popper to secure it.
  6. Place the wrapped poppers on the prepared wire rack, seam-side down. Bake for 20-25 minutes, or until the bacon is crispy and golden brown. The cheese should be bubbly and slightly browned around the edges. For extra crispiness, you can switch the oven to broil for the last 1-2 minutes—just watch them closely so they don’t burn.
  7. Let the poppers rest on the rack for 5 minutes before serving. Transfer to a plate lined with paper towels to absorb any excess grease. Serve warm.
